Our Olive Oil

OUR OIL IS GENUINE OLIVE JUICE FROM HUNDRED-YEAR-OLD OLIVE TREES

Our oil is genuine olive juice from hundred-year-old olive trees, turned into liquid gold using a production procedure that we inherited from our grandparents. Our entire production is centred in Periana, capital of Alta Axarquía in the Malaga region, 23 kilometres from Vélez-Málaga, in a spectacularly beautiful landscape of olive groves. Periana contains 90% of the production of our “Verdial de la Axarquía” olive, a native variety with unique organoleptic characteristics, blessed by an unrivalled environment and climate.

WE CARE FOR EVERY STEP OF THE WAY

IN OUR TRADITIONAL PRODUCTION PROCESS, WE CARE FOR EVERY STEP TO OBTAIN EXCELLENT, NATURAL RESULTS


The countryside. Over eight hundred families care for three hundred thousand hundred-year-old olive trees. We make a careful selection of the olives each season.

The selection. The olive varieties and qualities are separated at the farm, so that they arrive at the mill separately, and are stored in different hoppers.

The milling. It is done daily, to prevent fermentation of the olives. This is possible thanks to our milling capacity, which is over one hundred fifty thousand kilos per day.

The extraction. This process is carried out at room temperature so that our oil loses none of its properties of colour, aroma or flavour.

The controls. All our products are subject to strict quality controls, which ensure an excellent and homogenous result in every drop. From physical-chemical analyses, analyses of the organoleptic characteristics, and classification tastings, everything contributes to creating oil that has won recognition as one of Spain’s best extra virgin olive oils.

Our Varieties

The main olive variety cultivated in Periana and harvested at our olive oil mill is Verdial (known as “Verdial de la Axarquía” or “Verdial de Vélez-Málaga”). The San Isidro Olive and Fruit Cooperative (S.C.A Olivarera y Frutera San Isidro) handles 90% of the production of this golden, mild-flavoured oil that enchants from the very first drop. Many of the Verdial variety trees are hundreds of years old, and there are many that are over one thousand years old.

There are also younger trees of the following varieties: hojiblanca, arbequina, marteña, and nevadillo (in varying proportions). These are milled together and bottled in a blend known as Hojiblanco-Picual, as they are the predominant varieties.

Our History

SINCE 1982


The history of the modern cooperative dates back to the 1960s.

In the 1980s, the San Isidro and Nuestra Señora del Pilar cooperatives merged into what is now known as San Isidro Olive and Fruit Cooperative (S.C.A Olivarera y Frutera San Isidro). On its main facade, there is a special niche dedicated to its patron saint.

Currently, Periana’s Olive Cooperative is comprised of over 800 families, who care for over 300,000 hundred-year-old olive trees and handle the selection and processing of their fruits, which yield one of the best extra virgin olive oils.
